Yogurt is a fermented dairy product made by adding live bacterial cultures to milk, causing it to thicken and develop a tangy flavor. It is a versatile food enjoyed globally as a snack, ingredient, or condiment. 
Production process
The basic process for making yogurt involves:
  1. Heating and pasteurizing milk to kill any harmful bacteria.
  2. Cooling the milk to an optimal temperature for bacterial growth (around 43–46°C).
  3. Adding a “starter” culture, typically containing bacteria like Lactobacillus bulgaricus and Streptococcus thermophilus.
  4. Incubating the mixture for several hours, during which the bacteria convert the milk’s lactose into lactic acid, causing the milk proteins to coagulate and thicken.
  5. Cooling the yogurt to halt the fermentation process. 
Taste and texture
  • Tangy flavor: The fermentation process naturally creates a tart, slightly sour taste.
  • Creamy texture: The consistency of yogurt can range from a thin, drinkable liquid to a thick, custard-like solid, depending on the production method and type of milk used. 
Common types
  • Regular yogurt: Unstrained and has a smooth, creamy texture with a mild flavor.
  • Greek yogurt: Strained multiple times to remove excess whey, resulting in a significantly thicker, creamier texture and a higher protein content than regular yogurt.
  • Skyr: An Icelandic variety that is even thicker and higher in protein than Greek yogurt due to a different straining process. It is traditionally made with skim milk.
  • Kefir: A tangy, drinkable fermented milk product with a thinner consistency than yogurt and a higher concentration of probiotics.
  • Flavored yogurt: Sweetened yogurt, often with added fruit or other flavorings. Its high sugar content can significantly change its nutritional profile.
  • Plant-based yogurt: A dairy-free alternative made from milk substitutes like soy, almond, coconut, or cashew.
