A Victoria sponge is a classic British cake consisting of two layers of soft, airy sponge cake. The layers are sandwiched together with a filling of strawberry or raspberry jam and, traditionally, a layer of fresh whipped cream, though vanilla buttercream is also common. The top is finished with a simple dusting of icing sugar.
