Preparation tips
- Bring to room temperature:Â For more even cooking, remove the chicken from the fridge and let it sit at room temperature for about 30 minutes before roasting.
- Dry the skin:Â Pat the chicken dry with paper towels. For extra crispy skin, sprinkle it generously with salt. This draws out moisture and helps create a golden-brown finish.
- Add flavor:Â Rub softened butter under and over the skin, and season well with salt and pepper. For extra moisture and aroma, stuff the cavity with aromatics like half a lemon, some garlic cloves, and a few sprigs of fresh herbs (such as rosemary and thyme).
